Orange Juice Cake

This recipe is from my oldest friend, Kevin Ballard of Morris, IL and is the favorite of my closest TN friend Cam King of Townsend, TN!  Can't beat that. I modified the recipe just a little. I believe the original called for a cup of butter and a cup of sugar and a ½ cup of OJ in the juice goop you pour on top. I thought it was just a little too much. You use your own judgement!
Serves: 16 servings
  • Batter:
  • 1 box of yellow cake mix
  • 1 vanilla instant pudding
  • 4 eggs
  • ½ C cooking oil
  • 1 C orange juice
  • 1 C chopped pecans
  • Juice:
  • ¾ C butter
  • ¾ C Sugar
  • 6 Tablespoons orange juice
  1. Spray or butter a bundt or tube pan.
  2. Line bottom of pan with pecans.
  3. Mix rest of batter ingredients listed above together.
  4. Pour on top of pecans and bake at 350 for about 45 minutes.
  5. Right before you take it out of the oven, melt the butter in a pan on the stove and mix in the sugar and orange juice.
  6. Bring to a boil for one minute.
  7. As soon as you take the cake out of the oven poke holes in it with a long toothpick or ice pick and slowly pour this mixture over it.
  8. Let sit for 20 minutes or so and invert directly on a plate, not on a wire mesh.
