This chocolate orange banana nut bread is a great way to use up soft bananas

Chocolate Orange Macadamia Banana Bread

I am not a huge fan of plain banana bread. The predominant tastes in this recipe are chocolate and orange. Mmm. Won second place at the county fair.

Ingredients
  • 1 ¼ C all-purpose flour
  • ¾ C sugar
  • 1 tsp baking powder
  • 1 tsp salt
  • ½ tsp baking soda
  • ½ tsp ground cinnamon
  • 1 C semisweet chocolate chips
  • 2- 2.25oz package of macadamia nuts (around a cup)
  • ½ C canola oil
  • 1 C of mashed bananas (You will need 2 bananas to get this amount)
  • 2 large eggs
  • ½ C buttermilk
  • Zest from two to three oranges according to taste or use 10-12 drops of orange essential oil
Instructions
  1. Preheat oven to 350 degrees.
  2. Butter or oil the inside of 3 bread pans measuring 3 X 5.5 inches. You could probably make two loaves of a slightly bigger size. I also put some wax paper on the bottom.
  3. Combine eggs, canola oil and buttermilk. (If using orange essential oil add it now.)
  4. Then stir in the mashed banana.
  5. Add the flour, sugar, baking powder, salt, baking soda and cinnamon and mix just until combined.
  6. If using orange zest, add it now, along with the chocolate chips and macadamia nuts. Mix in by hand.
  7. Divide batter into the 3 pans. I weigh them to make sure it is evenly divided.
  8. Bake around 45 minutes. (I have started putting a temperature probe in all the breads I make when I think they are close to being done. The middle was 206 degrees, each side was 208-209. It was beautifully moist. Once you cut into it, you would know next time whether to take it out sooner or leave it in longer depending on your oven and how moist the bread is.)
  9. These just fall out of the pan when you turn them upside down!
