Candy- Caramel Pecan

Ingredients
  • Crust:
  • ⅓ C butter
  • 20 cream-filled Oreo’s crushed
  • Filling:
  • ½ C butter
  • 1-package (14 ounces) caramels
  • 3 C pecan halves toasted
  • Topping:
  • ¾ C semisweet chocolate chips
  • 3 tbsp butter
  • 3 tbsp heavy whipping cream
  • 3 tbsp light corn syrup
  • ¾ tsp vanilla extract
Instructions
  1. Melt ⅓ C butter.
  2. Stir in the cookie crumbs.
  3. Press into an ungreased 9” square baking dish.
  4. Bake at 325 degrees for 10-12 minutes or until set.
  5. Cool on a wire rack.
  6. In a saucepan over low heat, melt caramels and ½ C butter.
  7. Stir in the pecans.
  8. Pour over the crust. Cool.
  9. For the topping, in a saucepan, combine the chocolate chips, butter, cream and corn syrup. Cook and stir over low heat until smooth.
  10. Remove from the heat; stir in the vanilla.
  11. Pour over the caramel layer.
  12. Cool on a wire rack.
  13. Cut into 1” squares.
