Soup- Chilled Cantaloupe

Serves: 4-6
  • 6 cups chopped cantaloupe or honeydew, peeled and seeded
  • 1 ½ cups orange juice
  • ¼ cup fresh squeezed lemon juice (about one lemon)
  • ¼ cup fresh squeezed lime juice (about one lime)
  • 1 ½ T of honey
  • ¼ t of ground cinnamon
  1. All the above ingredients will just about fit into one blender, if not, puree it in two batches.
  2. If in two batches, recombine in a bowl and mix it up to make sure all the ingredients are evenly distributed.
  3. Chill, garnish with fruit and a mint leaf, serve in chilled bowls or put in a glass and drink like a smoothie!
